I know I have lots of people on my flist who cook/bake/are amazing in the kitchen and so I turn to you in my time of need:

You guys, I need a brownie recipe.

1 2/3 cups unsalted butter, softened
13 oz bittersweet chocolate
6 large eggs
1 tbsp vanilla
1 2/3 cups sugar
1 1/2 cups flour
1 tsp salt
1 1/3 cups chopped nuts (optional)

Preheat oven to 350F. Line a 9x13" pan with foil or wax paper or parchment.

In a heavy saucepan, melt butter and chocolate together. Set aside.

Beat eggs, sugar and vanilla together. In a separate bowl, mx the flour and salt.

When the chocolate-butter mixture has cooled a little, beat in the egg mixture, then mix in the flour and the nuts. Mix until it's all smoothly combined, and pour into the lined pan.

Bake about 25 minutes. The middle should still be gooey if you stick a toothpick into it. Don't overbake! If you think the brownies seem slightly underdone, that's the time to take them out.

OK- I suck, because I just make them from a box- preferably one w/chocolate chunks in it.

I do top w/my own basic glaze- melt a stick of butter, 1/4-1/3 c. cocoa, 1+c. p.sugar (to taste- likely need more) 1 tsp. vanilla, 1-2 TBLS kalua and add enough milk to be able to pour it. Should be more of a glaze than a frosting- pour over warm brownie. Sometimes I throw a cup of chopped nuts in as well. Is yum!

If it has to be homemade? This Heaven And Hell Brownies Recipe has been on my 'list of things to try' for a while. But I can't recommend it personally because I haven't made it. Yet.

I've won several prize ribbons with this one, which is adapted from the Harrowsmith Cookbook, Vol 1.

1 cup margerine, melted
2 cups sugar
4 eggs
4 giant heaping-as-high-as-you-can-imagine tablespoons (use actual spoon, not measuring spoon) cocoa
1 teaspoon vanilla

Cream these together.

Now add:
2 cups flour
1 flat tablespoon (here a measuring spoon is best) baking powder.
pinch salt

MIX!!!

Nuts, chocolate chips, or marshmallows may be added. As many as you like. Or none.

Now. Preheat the oven to 350F (even Cdn recipes use F for cooking). Pour the brownies into a pan. You know, a big metal cake pan. Grease it first.

Bake for 30 minutes. After 15 minutes, grab an oven mitt or two, pick up the pan, and shake it hard back and forth to make the brownies fall (makes 'em denser!). If you want gooey brownies, check on them at 22-25 minutes. For more cakey brownies (my preference), take 'em out at 30 minutes.

EAT!!!
